Goulash Soup

This is a old favourite from the Movenpik in East London. I was fortunate enough to work 

for Mr Stiedl before he sold the restaurant, and this was one of the many dishes he taught me to

make.

Goulash Soup
Makes: about 5 liters

700g Steak offcuts, cut into 5mm cubes
2 large onions, diced fine
125ml paprika
1 each red green and yellow pepper
125ml tomato paste
200g flour
500ml diced potato
couple of bayleaves
salt and pepper

Brown onionsin some oil or fat
Add paprika and fry till dark.
Add meat, allow to brown
Add tomato paste and bayleaves, allow to darken.
Add Flour, cook for about five minutes.
Add peppers, and about 6 l water.
Season with salt and pepper.
simmer for about 35 minutes, add potato 
and cook till soft.
Check seasoning, maybe add some chilli to zip it up.
