Cauliflower & Chickpea Curry

This is from a recent magazine that was brought to work by one of my bosses

Cauliflower & Chickpea Curry
60ml oil4 onions, finely chopped

60ml garam masala

10ml chilli powder

10ml tumeric

800ml coconut

800ml diced chopped tomatoes

800ml water

2 heads cauliflower, floretized

60ml lemon juice

2 tins Chickpeas, drained and rinsed

Fry onions in oil for 10-15 minutes until soft and golden

Add spices, fry 5 minutes or until raw spice smell disappears

Add water, coconut milk and tomatoes

Cook for 20 minutes   

   Can be left at this stage for up to 4 days

Add cauliflower, chickpeas & lemon juice.

Season well with salt and pepper

Cook for 15 minutes
