This is yet another variant of chilli sauce that I make at work.The irony is I make the sauces, but don’t eat them because I’m not a fan of chilli, but this one I enjoy occasionally.The original recipe isn’t mine, I think I found it on Chef2chef.net years ago
375ml ground chilli paste
80ml fine chopped garlic
1l rice vinegar
1.3l sugar
1.3l water
125ml fish sauce
20ml salt
160ml maizena
Mix everything together in a stainless steel pot
Bring to the boil, simmer for 5 minutes.
Cool, bottle and use.
Store in fridge.
