Yes, it’s good enough to use without modification but I have to give credit where credit is due.
He uses it for a spam fritter in on of the feasts, I use it for anything that needs a lightly crispy
batter
Just as a word of warning, accuracy is pretty essential here, as well having a scale that measures in single grams
Tempura Batter
500g flour
500g maizena
30g salt
10g bicarb of soda
1200g icecold water (I take a bucket of ice, fill it up with water, give it a stir and wait a couple minutes)
Mix together the dry stuff thoroughly place the bowl over ice and stir in the water until just mixed.
(slightly lumpy is good, overmixed is bad)
Heat your deep oil to 190C
Season your soon to be fried item
Dredge it in flour, shaking off the excess
Drag through the batter letting the extra drip off
Fry until GBD
