This is a scaled down version of the recipe I use at work.
It normally gets served in the bar with hummus as pre -dinner snacks
Spiced Flat Bread
560g bread flour
10g yeast
375ml water
60ml sesame seeds
60ml poppy seeds
30ml cumin seeds
10ml salt
5ml chilli powder
2.5ml ground cardomon
Flour for dusting
60ml butter, melted
Method
1.Make a smooth stiff dough by mixing everything except the butter in a mixer fitted with a dough hook
2. Let rest 1 hour.
3. Divide dough into quarters and roll each into a ball.
4. With rolling pin, flatten each ball into a 7mm thick disk.
10. Place disks on baking sheet and brush with melted butter.
11. Bake at 200C for 10 – 15 minutes or until brown and crisp
