Skunking Chilli Sauce

Roasted Melange of Hot Peppers
  Not really a recipe, more a method
    My Boet (aka Skunk) was busy looking for a homemade hot sauce, as he overplanted
his garden with chillis.

Here Goes…..

  Sugar/vinegar Gastrique:
  Needed:
   Equal amounts of white sugar and white vinegar.
  How to:
   Bring to the boil and cook until syruppy, allow to cool.

Roasted Peppers
  Needed:
    Mixed hot peppers eg. habaneros, birdseyes cayennes, whatever.
     (you decide for mild or wild)
     Oil
   How:
    Remove stems from the chillies. Drizzle oil over and roast in a 180C
    oven till softened, but not blackened.
    Blitz in a blender while still hot, adding enough gastrique to thin it to sauce
    consistency.
