i blame Nigel for introducing me to these….
Yesterday I made them at work and served it with a cauliflower and chickpea curry.
It was pretty damn good
1kg cake flour
40ml sugar
10ml salt
15ml baking powder
440ml milk
125ml oil
Mix to form a soft smooth dough, kneading for about 10 minutes
Leave for about a hour
Divide into 20 golf ball sized dough balls
100g coconut
100g raisins
50g castor sugar
Blend till “crumbly”
Roll out each dough ball to 5mm thick
Sprinkle half with coconut, fold over
Roll out to 2mm thick.
Preheat oven to 280C (yeah, its probably hotter than most ovens
crank the grill elements on full ball).
Bake under the grill for 90-130 seconds or until puffy with light brown spots.
Brush with melted butter and stack up covered with a cloth until ready to serve.
