Just a quickie recipe that was made at work this week…
Soak until soft:
500ml tamarind
750ml hot water
Squeeze out juice
Add:
150ml Sugar
125ml vinegar
Boil together and set aside
Fry together:
90ml oil
14 cloves garlic
45ml dried curry leaves
16 chillies, slit in hlaf
Add:
60 ml methi masala
Fry for 30 seconds
Fry
30ml oil
30ml mustard seed
Add all three mixtures together
Blend until smooth
Thicken with a maizena-water slurry
Btw this sauce is great in a bacon and hotsauce omelette.
