I made this at work this past weekend. Fortunately I’m lucky enough to have my own big lemongrass plant and lemon tree growing in the vegetable garden here.
Lemongrass & Ginger Jelly
4 lemongrass stalks, bruised & roughly chopped
3l water
2.6kg lemons, chopped into small (2cm) pieces
100g ginger, thinly sliced
+- 900g sugar
Simmer lemongrass, ginger, lemons and water for 1 hour
Strain through muslin
450g sugar to 600ml juice ( You should have 1.2l liquid after straining)
Dissolve sugar in juice over low heat
Boil for 10min to setting point (105C)
Skim & bottle into sterilised jars
