Here’s another recipe from the archives at work:
These are for ladyfinger biscuits. They are very similar (close to identical in taste and
texture to bouidour biscuits), but a whole lot cheaper.
Ladyfinger Biscuits
115g white bread flour
3x57g sugar
6 eggs, separated
85g maizena
Beat 1x57g sugar plus the egg yolks until pale and fluffy
Beat 1x57g sugar with the eggwhites until frothy and doubled in size
(about 2 minutes)
Mix 1x57g sugar with the maizena, slowly add to egg whites and beat until
stiff (same as meringues)
Fold yolk mixture & White mixture gently together, sift over flour and fold in
Pipe 5cm biscuits with a plain 10mm plain tip onto a greased baking pan
Bake at 210C for about 8 minutes.
Allow to cool and store in a airtight container
