Jou Ma Se Melktert
I’ve made this relatively often at work for dessert.
It is good in the way old fashioned milk tart should be.
Crust
Mix until a soft dough forms:
500ml cakeflour
2ml salt
5ml baking powder
60ml sugar
150g softened butter
2 eggs
Press into two greased 260mm pie plates
Filling
Scald
1.5ml milk
2 cinnamon sticks
Mix together
200g cake flour
500ml milk
Add to hot milk, cook until thickened.
Mix in
125g butter
200g sugar
10ml vanilla essence
Temper and then mix in
8 egg yolks
10ml baking powder
Beat to soft peaks
8 egg whites
Fold into milk mixture
Pour into prepared pie pans
Bake at 200C for 15-18 minutes
Allow to cool in oven for 10 minutes
Makes 2 melktert
