Steak Tartar a la Hans Berszinn
from The Bell Restaurant, Port Elizabeth
(aKa Fillet Americain)
2 egg yellows
1 tot oil
Dash Worcester sauce
Dash Tabasco sauce
Salt & pepper
Paprika
Dash brandy
Teaspoon anchovette
¼ small onion finely chopped
10 capers finely chopped
200g fillet, minced, by hand (machine mincing is reall bad for this)
• Mix everything together in a bowl(except the fillet)
• Only add the meat when the customer is ready to order
• Then mix well with a large fork
• Place lettuce on medium plate
• Garnish with half ring onions, sliced gherkins and baby tomato.
