For Herr Schmidt

On Sunday it was quiet here at the hotel, and I was in the mood to experiment.

These were the results:

1) Green Mango Chutney

2) Mango & Yoghurt Dip

3) Leanne’s Chilli bites (not part of the experiment, these have become a favourite barsnack here.

I promised Herr Schmidt I would post this, so here they are….

Green Mango Chutney:

1kg grated green mango

12 chillis

12 cloves garlic

15 ml salt

12 black peppercorns

3/4cup oil

Mince together chillies and garlic until almost a paste.

Warm the oil and slowly fry everthing together for about ten minutes

(You may need to add some water, I splashed in some cheap and nasty white wine)


Mango & Yoghurt Dip:

2 parts plain yoghurt

1 part green mango chutney

Blend together until smooth, adjust seasoning to taste

Leanne’s Chillibites

You could say Leanne is basically my sous chef here, a brilliant youngster with a smart head on her shoulders

and a really good touch when it comes to seasoning and spicing stuff.

500ml flour

2 eggs

1 onion, finely diced

1/2 red pepper, finely diced

1/2 green pepper, finely diced

45ml hot (red) curry powder

30ml mild (yellow) curry powder

15ml sweet paprika

25ml baking powder

5 ml salt

enough milk to make a thick batter (I asked Leanne how much and she said enough)

Mix everything to a smooth thick batter.

Deepfry teaspoon fulls in hot oil until GBD.

Serve with Tzatziki, Mango & Yoghurt dip etc.
