Cucumber Kimchee

Cucumber Kimchee
Spicey and refreshing, just what I’ve been craving

3 cucumbers, 1/4 lengthwise, seeds removed, then halved lengthwise and cut into 1cm blocks
25ml salt
120ml sugar
10ml red chilli flakes
2 garlic cloves, crushed
30ml ginger, finely chopped
60ml fish sauce (optional)
1 carrot, fine jullienne, 1cm lengths

Toss cucumbers with 5ml salt & 30ml sugar
Let stand 10minutes then drain
Mix sugar, salt, chilli, garlic, ginger, fish sauce, and soya sauce.
Blend till sugar is dissolved (stickblenders are useful about here)
Toss over veggies, mix well
Let stand 15 minutes
Stash in fridge
