This is from one of my mom’s Jewish cookbooks, and has become a firm
favourite among the staff at work. Sorry about the odd layout, but it was copied
off the standardised recipe sheet I use and I was too lazy to reformat it.
Kitchendog
Recipe Name: Cinnamon Bites
Yield 40 biscuits
Ingredients Amount 4x 8x
Butter, softened 225g 900 1800
Castor Sugar 125g 500 1000
Egg Yolks 2 8 16
Vanilla Essence 5ml 20 40
Coconut 150g 600 1200
Cake Flour 225g 900 1800
Cinnamon, Ground 5ml 20 40
Baking Powder 2.5ml 10 20
Salt 2.5ml 10 20
Method:
1. Cream butter, sugar, yolks & vanilla
2. Add coconut & mix briefly
3. Mix remaining ingredients into dough.
4. Knead until smooth & pliable
5. Wrap in plastic & chill for 20 minutes
6. Pinch off small pieces, roll into balls
7. Bake at 160C for +- 18 minutes
8. Leave to cool for 5 minutes then remove off tray
