Almost Instant Mango Atchar

I made this yesterday as a experiment, and it was good

Now it will be interesting to see how the flavours develop over the next couple days

until it is finished.

Instant Atchar

                2kg mangoes, skinoff & cubed

                45ml mustard powder

                45ml crushed fenugreek

                45ml crushed mustard seeds

                125ml oil

                125ml ground chilli, pounded till fine

                125ml curry leaves, pounded to fine

                80ml salt

                500ml white vinegar

Fry the spices and flavouring in the oil, let cool slightly.

Mix everything together, allow to stand for a couple hours

Eat

Enjoy
