Large Volume-ish Ginger Biscuits

 Ginger Biscuits

I made this last week in preparation for afternoon teas through the Easter Weekend.
Make about 200 biccies

The stuff you be kneading:

750g butter (proper butter please, not margarine crap)
240g sugar
250ml syrup
20ml vanilla
20ml cinnamon
10ml cloves
40ml ginger
10ml nutmeg
20ml bicarb
1.125kg flour

How Its Done:

Cream together butter & sugar.
Add in all the remaining stuff and mix until a soft dough forms. (I’m lucky enough to
have a industrially sized mixer to do this in)
Form dough into small balls, about 2cm in diameter
Place on greased baking trays and squish flat. they should be about a centimeter thick.
Bake in a 180C oven for 12 – 15 minutes.
Allow to cool slightly on pan, then move to racks to cool completely.
