3 Strand Braided Kitke Loaf

Just because it’s Friday and Mom always got kitke for us on Fridays. Now that I’m in
the middle of Pondoland and the nearest baker is about two hours drive away, I’ve been
making my own using the following recipe.


Kitke

What’s Needed

    2 pkts yeast
    1l lukewarm water
    125ml sugar
    4 eggs
    15ml salt
    125ml melted butter
    1.2 kg cake flour
    500g extra cakeflour

  How You Make It:
    In a large bowl, mix everything together except the extra flour.
    Add enough of the remaining flour to form a soft dough (how much depends on
         a variety of factors, including how humid it is, moisture content of flour etc..)
    Knead for about five min until Smooth and springy (low speed in the floor standing mixer,
         how ever fast you can do it by hand otherwise)
    Allow to rise covered until double in size.
    Turn out, punch down and divide into four sections.
    Divide each section into three equal parts, rolling them to form two cm in diameter ropes.
    Make a normal three strand braid, lifting and turning each strand, to give a loose bulky plait
    Repeat for other loaves
    Place onto floured baking trays and leave in a cool-ish spot until doubled in size, normally thirty to 
         forty five minutes
    Bake at 170C for approximately twenty five minutes, or until GBD and the loaf sounds hollow if          
       rapped with the knuckles
    Allow to cool on a wire rack
    
Besides tearing off pieces and eating it fresh out the oven, serve this at meals or make bread & butter
pudding with it once it’s slightly stale.
