This is the basis for Cajun Blackened fish, burgers etc
It comes from the “Prudhomme Family Cookbook”
A very interesting read on the foods of the deep south.
Cajun spice:
0.375 kg paprika
0.5 kg salt
0.1 kg onion powder
0.125 kg garlic powder
0.13 kg cayenne
0.11 kg white pepper
0.11 kg black pepper
0.03 kg thyme
0.03 kg oregano
Grind all together to form a fine powder.
Mix well and store in a dark airtight container.
The actual blackening process will follow when I have a chance.
