Rusks

Here’s the rusk recipe we use at the hotel, scaled down a bit though….

Rusks

Melt together

 500g butter

 330ml sugar

 5ml salt

 625ml milk

Mix together

 1kg selfraising flour

 250ml oats

 250 ml bran (crushed All bran flakes)

 250ml muesli

 6ml baking powder

 80ml linseed

 80ml sunflower seed

 80ml coconut

 80ml raisins

Mix dry and wet to form a soft dough.

Press into baking pan

Bake at 160 for about 45 minutes

Allow to cool, cut into fingers

Dry at 80C until done (about 6 hours)
