Lemon Tea Bread

This is a very simple recipe that even my sister can make.

At work because we have the toys to do it, we normal scale this up about ten times

in a batch and use it to bake muffins for the breakfast buffet.

Lemon Tea Bread

Ingredients

Amount

butter, softened 90 g

white sugar 210g

eggs 2

milk 120ml

cake flour 180g

baking powder 5ml

salt 2ml

lemon zest 15ml

Method:

cream butter And sugar

add eggs and milk, mix well

sift together dry ingredients

add to butter mixture

fold in lemon zest and portion into greased pans

bake @170°C for 35-40 min or until tester comes out clean

For muffins 3/4 fill greased muffin tins and bake at 170C for about 18 – 20 minutes
